What an exquisite taste this fresier cake with strawberries has! I cooked for the first time. I excluded alcohol, so I soaked it in sugar syrup, and soaked the gelatin for the mousse in 50 ml of water. I followed the recipe exactly when preparing the mousse. To prevent the dissolved gelatin from curdling when interacting with cold cream, I added it to the warm yolk syrup, then cooled everything to room temperature and only then combined it with the whipped cream. The mousse turned out to be very delicate, airy, the creamy taste goes well with fresh strawberries. But I was not satisfied with the biscuit. Even though I used my favorite almond flour, the cakes were a little rough and too sweet. Next time I'll add less dry ingredients and sugar (or use a classic sponge cake recipe). There was a lot of mousse, it was enough not only for the layer, but also to cover the top of the cake. Therefore, I didn’t fill it with chocolate, as suggested in the recipe, and I didn’t regret it at all (my family likes moderately sweet desserts). Despite the nuances with the sponge cake, I give 5 stars for the excellent and refined taste, as well as for the attractive appearance of the fresier cake with strawberries. Thanks for the recipe!
