Eggplant in spicy sauce

    Wash the eggplants, peel them and cut each one lengthwise into 8 pieces. My eggplants were small, so I simply cut them lengthwise. Large and long ones, of course, it’s better to cut them crosswise if you don’t want them to look like spaghetti :)

    I put it in a colander, add salt, stir and leave for 20 minutes so that the eggplants release their juice and all the bitterness goes away.

    This is the amount of liquid I got! At the end, the eggplants can be slightly squeezed.

    I fry in vegetable oil on each side until cooked and place on paper towels to absorb excess fat. At this stage I lightly pepper.

    Let's prepare the sauce. I slightly heated the honey in the microwave to make it easier to work with. I add 3 teaspoons of lemon juice to it, salt to taste.

    I squeeze out the garlic. I taste it. Everything here is optional. You may want more acid, or vice versa sweetness. Here, as they say, “there are no comrades according to taste and color...” :) you can also add soy sauce, for example!! For me, the proportions that I gave were ideal.

    I transfer the eggplants to the dish on which I will serve, pour the sauce on top, sprinkle with herbs. Don’t worry, the lower layers will also marinate well. And it is advisable to leave for about 20 minutes so that all the flavors combine well with each other. Bon appetit!!

An interesting recipe, now I’m using it as a basis to cook it. The composition does not contain vegetable oil. I added half a sweet pepper and some bitter pepper. For spice. A little more garlic and of course soy sauce.
