STEP 1
Add salt, sugar, vinegar to a pan of water and wait for the liquid to boil.

Cut the washed eggplants into cubes with a side of 1.5 cm.
STEP 3
Then pour the chopped eggplants into the boiling marinade, mix lightly, add bay leaf and cook for 5 minutes. Place the boiled eggplants in a colander and let all the liquid drain.

Chop green onions.

I simplified the preparation of “mushrooms”... In a double boiler, put the whole eggplants for 20 minutes... then cut them into cubes... then salt, sugar, pepper, add herbs, onions, a small amount of apple cider vinegar, odorless oil and that's it... thanks for the recipe...

This is my third year preparing. Every time I think that's it. I don’t like eggplants))) I haven’t bought or cooked them at all before. I still rarely do this. But this recipe - I don’t understand what they resemble, but it’s very tasty! Several friends have already prepared this recipe. If such eggplants are sealed in sterile jars, they are perfectly stored in the pantry - without sterilization. I'm too lazy to bother with jars - this is the second year I've been making them in buckets).
