    Since flour has different properties, you may need more or less of it. Therefore, to prevent the dough from turning out too steep, add a little flour (20-25 grams) from the specified amount. If necessary, it is better to add it during kneading. Make a well in the center of the sifted flour and add vegetable oil.

    Boil the required amount of clean water. Pour boiling water into the mixture with flour and butter. Mix everything with a spoon.

    When the water has cooled slightly and mixed with flour, mix the mixture with your hands.

    Place the dough on the table and knead until smooth. If necessary, add a little more flour. The dough should not stick to your hands. It turns out soft and elastic. Cover the dough with cling film to prevent it from drying out and leave to rest for 30 minutes. During this time, the gluten will swell and the dough will become more pliable and very pleasant to work with.

    Divide the dough into 9 equal parts and roll each part into a ball. The number of parts will depend on the diameter of the pan in which the cakes will be fried.

    Roll each ball into a thin round cake approximately 2 mm thick. I got cakes with an approximate diameter of 19 cm. While you are rolling out the next cake, cover the remaining balls with a towel to prevent them from winding.

    Heat the pan over high or medium heat depending on the power of the stove. There is no need to add anything; the flatbreads are fried in a dry frying pan. Using a rolling pin, transfer the cake to a well-heated frying pan and fry for 1-2 minutes until lightly browned.

    Turn the tortilla over to the other side and fry until done. Do the same with each rolled out flatbread.

    Place the finished cakes in a pile and cover with a clean towel. When the cakes have cooled and become even softer, you can serve them.

My eggless water cakes turned out thin and elastic. I didn’t add all the flour into the dough, about 50 grams remained. Knead the dough well with your hands. Due to the large amount of vegetable oil, the finished cakes are slightly flaky inside. I fried several pieces not in a dry frying pan, but in vegetable oil. And I made a few more like chebureks stuffed with cabbage. All delicious! Great recipe!
