STEP 1
How to cook duck soup? Prepare the following ingredients. For the broth, you can take any parts of the duck, as well as a ready-made soup set. I have two small duck legs for soup. Medium sized vegetables. You can add your favorite vegetables to this set of vegetables. I have ready-made egg noodles, you can use homemade noodles. Spices to taste - bay leaf, black and allspice peas.
STEP 2
Take a 3-liter pan, place the duck, washed under cold running water, in it and fill the pan with water. Place it over high heat and bring to a boil. Then drain the water and rinse the meat. Fill the duck again with cold water (2-2.5 l.), add onion, parsley root, carrots (whole, onions can be added with the skins on, then the color of the broth will be a little yellowish, but rinse the onions very thoroughly), salt, bay leaf, a mixture of peppers and put on fire.
STEP 3
Bring the broth to a boil; if foam appears, remove it from the surface of the broth with a spoon. Then reduce the heat and cook the broth for about an hour and a half. The cooking time for the broth will depend on the parts chosen and the age of the duck. The meat will be soft in the finished broth.
STEP 4
Strain the finished broth, removing vegetables and spices. Set the meat aside to cool. Put the broth on the fire. Rinse and peel the carrots, onions, and potatoes for soup. Cut the onions and carrots into small cubes, the potatoes into medium cubes. Once the broth boils again, add the chopped onions and carrots and cook over medium heat for 7 - 8 minutes.
STEP 5
Then add the chopped potatoes and stir. Cook for another 5 minutes.
STEP 6
Separate the cooled duck meat from the bones and cut into pieces. Add chopped meat to soup.
STEP 7
After five minutes of cooking the potatoes, add the egg noodles and stir. Add salt to taste and cook the soup until the potatoes and noodles are ready over medium heat, covered.
STEP 8
Let the finished soup brew in the pan for 10 - 15 minutes, and then serve. For homemade duck soup, you can offer fresh bread and chopped fresh dill and parsley.
