Dough buns made with rye flour and onions

Light, airy, very aromatic and delicious! Dough buns with rye flour and onions are my next experiment - I had rye flour in the cupboard and needed to find a use for it! But rye flour itself is heavy (remember black bread), what kind of buns are there... Rye flour dough is best made with the addition of regular wheat flour (in this recipe 1:1). I must say that they made me very, very happy and I will definitely cook from them again and again!

Step-by-step preparation

Cooking timeCooking time: 2 hr 30 mins
  1. STEP 1

    STEP 1

We prepare the necessary ingredients, be sure to sift all the flour to saturate it with oxygen

  2. STEP 2

    STEP 2

Mix dry yeast, sugar and 2 tablespoons. l. flour

  3. STEP 3

    STEP 3

Add half a glass of water in small portions (so that there are no lumps) and stir until the yeast dissolves

  4. STEP 4

    STEP 4

Cover with a towel and leave in a warm place for 20 minutes

  5. STEP 5

    STEP 5

Meanwhile, peel the onion and finely chop

  6. STEP 6

    STEP 6

Fry in a heated frying pan with the addition of vegetable oil until golden brown.

  7. STEP 7

    STEP 7

    Mix wheat flour with salt

  8. STEP 8

    STEP 8

Pour the remaining water into the suitable dough, add vegetable oil, fried onions and both types of flour, knead the dough, knead well. This dough is quite sticky, so if you have a dough mixer or bread machine, be sure to use their services - this will greatly simplify the kneading process

  9. STEP 9

    STEP 9

Cover the dough with a towel and leave in a warm place for 1 hour.

  10. STEP 10

    STEP 10

After an hour, the dough rose very well - I didn’t even expect this from it! We knead it and form buns

  11. STEP 11

    STEP 11

From these ingredients I got 13 buns. Place them on a baking sheet lined with baking paper and greased with a small amount of vegetable oil.

  12. STEP 12

    STEP 12

Separate the yolk from the white and brush the buns with it so that they acquire a beautiful golden color when baking.

  13. STEP 13

    STEP 13

    Sprinkle sesame seeds on top

  14. STEP 14

    STEP 14

We put the buns in the oven at the minimum temperature, if the oven is gas, like mine, we leave the door ajar, because it still does not allow us to achieve a temperature of 50-60 degrees, like in an electric one. Leave the buns to proof for 15-20 minutes

  15. STEP 15

    STEP 15

Then close and bake them at 180 degrees for 25-30 minutes

  16. STEP 16

    STEP 16

We take our fragrant golden buns out of the oven and leave them to cool.

  17. STEP 17

    STEP 17

The aroma of the buns is simply amazing - most likely your household has already caught up)

  18. STEP 18

    STEP 18

And this is a cross-sectional photo - you can see how airy and porous they are! Bon appetit!

nasstin, what a young girl you are! It was so easy and simple to come up with a use for rye flour, and what a use it was - airy buns! Very appetizing, you can even make a kind of “hamburger” out of them. And of course, a healthy dish - rich in vitamins! Thank you very much for the recipe!!!
