  1. STEP 1

    STEP 1

How to make a delicious tender apple pie? Prepare your food. The butter for the dough should be soft, so remove it from the refrigerator in advance. For this pie it is better to use sour apples.

  2. STEP 2

    STEP 2

Start cooking with the dough. How to make the dough? Wash and dry the eggs. Divide them into yolks and whites. Set aside the whites; they will go into the filling. Place the yolks in a bowl. Add soft butter to them. Grind the yolks with butter until smooth. You can use a fork or a silicone spatula.

  3. STEP 3

    STEP 3

Sift flour and baking powder into the egg-butter mixture. It is important to sift the flour to saturate it with oxygen. Then the baked goods will turn out airy and rise well during baking. Knead the dough. At first it will be convenient to do this with a spatula, then with your hands. You may need a little more or less flour than the recipe calls for. Check the consistency of the dough. It should become homogeneous and should not stick to your hands.

  4. STEP 4

    STEP 4

As soon as this happens, stop kneading immediately - shortbread dough can become tough from prolonged kneading. Divide the dough into two parts - one larger, one smaller. Wrap them in film or bags. Place the larger one in the refrigerator and the smaller one in the freezer for 30 minutes.

  5. STEP 5

    STEP 5

Meanwhile, prepare the filling. How to make the filling? Wash and dry the apples. Cut them into quarters, remove the core, cut off the peel.

  6. STEP 6

    STEP 6

Grate the apples on a coarse grater and place them in a saucepan. Add 50 grams of sugar and lemon juice to the apples, stir and place on low heat.

  7. STEP 7

    STEP 7

Boil the apples for about 15 minutes, stirring, until the liquid evaporates. Then cool the filling. You can add cinnamon, vanilla, nuts, chocolate, lemon zest to it to taste.

  8. STEP 8

    STEP 8

Start beating the egg whites with a mixer. When they whip into a light foam, start adding sugar in portions. Once all the sugar has been added, continue beating the whites until smooth and shiny and stiff peaks form.

  9. STEP 9

    STEP 9

Assemble the pie. Take a baking dish; a small form, d 18 cm, is suitable for this amount of food. For a larger mold, increase the amount of ingredients. Remove most of the dough from the refrigerator. Cutting thin slices from it, line the bottom and sides of the pan with them, forming the base of the pie.

  10. STEP 10

    STEP 10

Place the apple filling on the sand base and smooth it out with a spoon.

  11. STEP 11

    STEP 11

Remove the smaller piece of dough from the freezer. Grate half of this piece on a coarse grater over the filling.

  12. STEP 12

    STEP 12

Place whipped whites on top. Rub the remaining half of the dough onto them.

  13. STEP 13

    STEP 13

Preheat the oven to 180°C. Bake the pie for 30-45 minutes, depending on your oven and size. The dough on top should brown and the meringue should become creamy. It will rise strongly at first, but then fall. Leave the finished pie for 30 minutes in the cooling oven with the door ajar and only then remove and cool completely.

  14. STEP 14

    STEP 14

When serving, you can sprinkle the pie with powdered sugar. Bon appetit!

Hello. For 100 grams of butter, 75 grams of flour is not enough flour? Is there any inaccuracy in the recipe here?
