STEP 1
Let's make the dough. First you need to prepare a glass of sugar, two yolks and 250 grams of cottage cheese. It is better to remove the eggs from the refrigerator in advance so that they warm up to room temperature.
STEP 2
Mix all the products in a deep cup and blend with a blender until smooth. Then add soda slaked with citric acid. Let's wait 10 minutes allotted for the fermentation process.
STEP 3
Pour the mixture into a convenient bowl. Add half the flour (1 cup) and start kneading the dough with a spoon.
STEP 4
Add the remaining flour (1 cup) and knead the dough on the work surface. It should turn out smooth and soft.
STEP 5
Divide the dough into 6 equal parts, roll each into a ball and leave for 10 minutes. Cover the pieces with cling film to prevent them from getting airy.
STEP 6
Cut out a rectangle or circle from parchment paper that is large enough to fit into your baking pan. Grease it with butter and sprinkle with flour. Place one ball in the middle and thinly roll it out into a flat cake with a rolling pin, trying to give it the shape of a circle. No need to pierce with a fork. Place the cake on parchment in the oven for 10 minutes at 160 degrees.
STEP 7
Using scissors, cut off the uneven edges of the finished cake, which is still hot. We bake the remaining cakes, cutting them all so that they are the same size.
STEP 8
Place the finished cakes in a stack and prepare the cream.
STEP 9
Pour the milk into a small saucepan or saucepan and heat it on the stove. Beat the whites, egg, flour and sugar with a mixer in a deep bowl. When the milk boils, pour two ladles of milk into the egg mixture, mix well and pour everything back into the pan with the milk in one motion. Cook until thickened over low heat. About 10 minutes.
STEP 10
Add cottage cheese, sour cream, butter and vanilla sugar (or vanillin) to the cooled custard.
STEP 11
Blend with a blender until smooth and fluffy.
STEP 12
Grease the cakes generously with cream and place them on top of each other. Sprinkle coconut flakes on top and decorate with candied fruits. You can come up with a decoration according to your taste: tangerines, fresh strawberries, etc. Let the cake brew and soak in the refrigerator for 2 hours.
