I had 200 g of cottage cheese left and wanted to bake something. On the website I found a suitable recipe for cottage cheese muffins with raisins in silicone molds. The recipe is simple and convenient. I mixed all the ingredients with a mixer. Take the butter out of the refrigerator in advance so that it becomes soft and well whipped. I also took out the eggs at the same time as the butter, it’s better when the products are at the same temperature. My cottage cheese was 9% wet, I didn’t grind it separately. We like the inclusions of cottage cheese). We don't like raisins, so we didn't add them. But I put half a walnut on each piece, and the muffins turned out delicious with it too. Bake for 40 minutes until golden brown. I checked the readiness with a wooden stick. The curd cupcakes are very tasty, juicy and smell nice of vanilla! The inside is porous, and on top there is a crispy sweet crust, which only happens with cottage cheese pastries).

The muffins turned out amazing, you will lick your fingers 😋 I slightly changed the recipe for myself, since there was less cottage cheese, I took half of everything, a little less sugar and 2 eggs. Well, they turned out really great, and most importantly, it was very easy, thanks for the recipe!
