Cucumber rolls with curd cheese and red fish

STEP 1

How to make cucumber rolls with cottage cheese and red fish? Prepare the necessary products. A long cucumber is best; it will yield strips large enough for a roll. If you only have short fruits, it’s okay, make the rolls small. Take any fish - trout, salmon, pink salmon, chum salmon. Both store-bought and home-salted will do. An interesting taste will be obtained with smoked fish.
STEP 2

Any greens you like will do, but I would recommend using dill - its taste goes well with fish. Rinse the greens well under running water, then dry them with paper towels or napkins. Remove branches that are too thick. Finely chop the greens with a knife.
STEP 3

Finely cut the fish into cubes; the smaller, the neater the appetizer will look.
STEP 4

Take a small bowl and place the chopped herbs and fish in it. Add cheese. You can use any curd cheese; with additives the taste will be even more interesting. In general, any soft cheese will do - feta, feta cheese, cream cheese, mascarpone. Just keep in mind that some types of cheese are very salty; then choose lightly salted fish.
STEP 5

Mix all filling ingredients.
STEP 6

Wash the cucumber and dry it. Take a special knife for paring vegetables - it will be the most convenient for the job. Cut the cucumber into long thin strips. It is better not to use the first cut of the cucumber skin, it is too hard. One cucumber can yield about 20 strips.
STEP 7

Lay the entire length of the strip on the board. Place a teaspoon of filling on the very edge. There is another option to smear it along the entire length, then you will get a thicker, multi-layered roll.
STEP 8

Carefully roll the cucumber into a roll, wrapping the filling inside.
STEP 9

Twist all the strips and all the filling in this way. To decorate, cut cherry tomatoes into halves. Pierce each tomato half with a toothpick and secure the roll with it. You can also use special skewers, but they seemed a little large to me.
STEP 10

Place the rolls on a plate, garnish with fresh herbs and serve. Bon appetit!
