Crostata with apricot filling

Step-by-step preparation
STEP 1
To prepare crostata you will need: egg yolks, sugar, butter, salt, flour, apricot jam.
STEP 2
Cut the chilled butter into cubes.
STEP 3
Add sugar to butter.
STEP 4
Grind butter with sugar.
STEP 5
Add flour sifted with salt.
STEP 6
Grind everything until crumbs form.
STEP 7
Beat the yolks, add to the flour mixture, mix. Knead the dough.
STEP 8
Form the dough into a ball.
STEP 9
Separate 1/3 of the dough. Wrap each part separately in cling film and place in the refrigerator for 40 minutes. Chilled dough will be easier to work with.
STEP 10
If necessary, cover the prepared baking pan with oiled parchment. Roll out most of the dough on a floured surface. Transfer the dough into the mold, level it along the bottom, and make sides at least 3 cm high.
STEP 11
Carefully prick the dough with a fork.
STEP 12
Spread jam on the dough.
STEP 13
Remove the remaining dough from the refrigerator and roll it out onto a floured surface into a layer. Cut into strips about 1 cm wide.
STEP 14
Place the strips on top of the filling in the form of a mesh.
STEP 15
I have a few strips left, I connected them with the sides. The sides must be folded over the filling and pressed lightly.
STEP 16
Bake the pie in an oven preheated to 190 degrees for 30 minutes until golden brown.
STEP 17
Cool the finished pie completely and serve. Enjoy your tea!
