Crostata with apricot filling

Italian fruit pie made from shortcrust pastry. A pie under this name is little known in our country, but in Italy it is quite popular due to its ease of preparation. The main feature of crostata is that it is made open and decorated with a mesh of strips of dough on top. Serve only cooled.

    To prepare crostata you will need: egg yolks, sugar, butter, salt, flour, apricot jam.

    Cut the chilled butter into cubes.

    Separate 1/3 of the dough. Wrap each part separately in cling film and place in the refrigerator for 40 minutes. Chilled dough will be easier to work with.

    If necessary, cover the prepared baking pan with oiled parchment. Roll out most of the dough on a floured surface. Transfer the dough into the mold, level it along the bottom, and make sides at least 3 cm high.

    Remove the remaining dough from the refrigerator and roll it out onto a floured surface into a layer. Cut into strips about 1 cm wide.
