  1. STEP 1

    STEP 1

How to make tomatoes crispy for the winter? Prepare all the ingredients for the preparation. Tomatoes must be ripe, but firm, of good quality and without external damage. Rinse the tomatoes thoroughly under running water, drain in a colander, and let the water drain. At the place where the stalk is attached, make punctures with a toothpick in each fruit. This will help maintain their integrity when pouring boiling water. Read about the blanks in a separate article under the steps.

  2. STEP 2

    STEP 2

Immediately you need to prepare jars for preparation. Wash small glass jars with soda solution and sterilize in a water bath or other familiar, proven method. Wash the lids, boil and dry. You will learn different methods of sterilization by reading the article on this topic. The link is at the end of the recipe.

  3. STEP 3

    STEP 3

Wash the greens and dry on a paper towel. Dill and parsley will add a wonderful aroma to the preparation. Peel the garlic cloves and cut into thin slices. Peel the onions and cut into rings.

  4. STEP 4

    STEP 4

Place black peppercorns, allspice, cloves, cloves of garlic cloves, onion rings and herbs into jars. Place the tomatoes tightly on top up to the shoulders of the jars. Pour boiling water so that the water completely covers the contents of the jars. Cover the jars with lids and leave for 20 minutes.

  5. STEP 5

    STEP 5

Then pour the water from the jars into a saucepan. Add salt (necessarily coarse rock salt), sugar and citric acid. Citric acid will allow the tomatoes in the preparation to remain elastic and crunchy for a long time. Stir and put on fire. Bring the marinade to a boil.

  6. STEP 6

    STEP 6

Pour the boiling marinade back into the jars up to the shoulders. Immediately seal the jars with tomatoes. Turn the jars upside down and wrap them in a warm blanket. Leave overnight until completely cooled at room temperature. The workpiece is ready. Bon appetit!

I'm interested in the recipe: crispy tomatoes for the winter. I have never covered tomatoes with citric acid. I prepared the ingredients: washed the tomatoes, peeled the garlic cloves and cut them into thin slices, cut the onion into half rings. I washed the jars and sterilized them in the oven for 15 minutes at 150°. In the bottom of the jars I put garlic, onions, peppercorns, allspice, cloves, parsley sprigs, and placed tomatoes on top. I poured boiling water over it, covered it with lids and left for about 20 minutes. Then I poured the water into a saucepan, added salt, sugar, citric acid, stirred and brought to a boil. I poured the marinade over the tomatoes and rolled them up with sterilized lids. I turned the jars over and wrapped them in a blanket. I have no doubt that the tomatoes will be delicious! Thank you very much Snezhana for the recipe!
