Crispy pickled cucumbers with vodka

STEP 1
How to make crispy pickles with vodka for the winter? Prepare the products according to the list. Try to choose cucumbers of the same size - the preparation will look better, and the salting will be even. Wash the cucumbers, place them in a suitable container, cover with cold water and leave for at least 2 hours. During this time, the cucumbers will become denser and crispier.
STEP 2
Wash the cucumbers again and cut off both ends. Wash glass jars with baking soda, then pour boiling water over them.
STEP 3
Place peeled garlic, bay leaves and hot chili peppers at the bottom of the washed jars.
STEP 4
Add dill seeds to each jar to taste. You can use dill umbrellas instead.
STEP 5
Top the spices with a couple of oak leaves. Place cucumbers close to each other on top of the spices.
STEP 6
Pour salt into jars. Use coarse or medium grind salt. You can use special salt for preparations.
STEP 7
Fill the jars with cold drinking water. I advise you to take filtered or bottled water. Cover the jars with lids scalded with boiling water and leave at room temperature for four days.
STEP 8
On the fourth day, the fermentation process should cease. The brine will turn white and the cucumbers will turn yellowish. A white cloudy sediment may form at the bottom of the jars. That's how it should be. This is the work of lactic acid bacteria.
STEP 9
Pour the cloudy brine from the jars into a saucepan and boil for 3 minutes.
STEP 10
Pour the boiling brine into the jars, being careful not to get it directly on the glass to prevent the jar from bursting. Pour boiling water directly onto the cucumbers, in the center. Pour in vodka. Then you can cover the jars with lids that have previously been scalded with boiling water. Wrap the jars until they cool and store them.
