I think cheese soup is especially good when freshly prepared. Of the mushrooms, I chose forest champignons, they are very fragrant. Fry them until golden brown. Indeed, this helped them not to soften in the soup and at the same time give maximum taste and aroma. I cut the onion into quarter rings and grated the carrots on a coarse grater. I didn’t dare grate the cheese because of its softness; I cut it into pieces. After the potatoes were ready, I cooked them all together for about 15 minutes. Grate the carrots on a coarse grater. I fried carrots, onions and mushrooms in melted butter, so, in my opinion, the soup turns out with a more delicate creamy taste. For the soup, I chose melted cream cheese in a tub, added 2 heaping tablespoons; I prefer to cook with it.
