STEP 1

Any foam that forms should be removed using a slotted spoon. For soup, I always put the potatoes in cold water, not boiling water, to create a potato broth. Cook the potatoes after boiling for about 15 minutes, do not add salt yet so that the potatoes do not turn out hard and do not cook for long.

Peel the carrots, wash and cut into small cubes. If desired, you can grate the carrots on a coarse grater. I prefer diced carrots for this soup. Peel the onion, rinse with cold water so that it does not sting your eyes, and chop finely.

Wash the mushrooms and cut into small pieces. Mushrooms must be taken fresh.

Add carrots, onions and mushrooms to the frying pan. Add some salt. Fry vegetables and mushrooms over medium heat for about 7 minutes, stirring occasionally. If you fry mushrooms over high heat, the juice will remain inside them and will not leak into the pan.
STEP 6

Grate the processed cheese on a coarse grater. You can also simply mash it with a fork if it is soft enough. The taste of the soup will also depend on the taste of the cheese.
STEP 7

15 minutes after the potatoes boil, add the mushroom fry and cheese to the pan.
STEP 8

Stir, pour in cream, add salt and seasonings to taste. After boiling, cook the soup over low heat for about 5 minutes.
STEP 9

During this time, the cheese will melt and the soup will be ready to eat. Serve the soup with fresh herbs - green onions, dill, parsley. Place the greens on a plate just before serving. Bon appetit!
