Creamy cauliflower soup with onions

Ingredients
Step-by-step preparation
STEP 1

We clean and wash the onion, wash the cauliflower and separate it into inflorescences. Finely chop the onion
STEP 2

Place it in a thick-bottomed saucepan along with the butter.
STEP 3

Saute over medium heat for 3-4 minutes until transparent
STEP 4

Fill the onion with water (I needed about 1.5 cups, but in the future we will only use 150 ml). Then put the cauliflower in a saucepan and cook for 10 minutes.
STEP 5

Salt and pepper to taste. When the vegetables are cooked, leave 200 ml of the broth and drain the rest of the liquid.
STEP 6

Place vegetables in a blender and puree into a homogeneous mass.
STEP 7

Add vegetable broth
STEP 8

Mix everything in the blender again
STEP 9

Place the resulting puree back into the saucepan.
STEP 10

Add cream
STEP 11

Pass the garlic through a press and heat to the desired temperature
STEP 12

Serve with crackers, garnish with a sprig of fresh herbs
