STEP 1
How to cook creamy shrimp soup? Prepare all the necessary ingredients.
STEP 2
Thaw the shrimp first. Drain the liquid released during defrosting. Dry the shrimp. There is no need to peel the shrimp during cooking, as the shell will make the broth richer in taste. If there is a head, then you can leave it and remove it later (step 6) along with the shell.

Melt the butter in a saucepan.
STEP 4
Add shrimp. Stir-fry them for 2-3 minutes.
STEP 5
Pour wine and water into a saucepan and bring to a boil. Let simmer for 2-3 minutes and remove the saucepan from the heat.

Drain the shrimp in a colander.
STEP 7
Save and strain the broth in which the shrimp were cooked; this is a flavorful broth for the future soup.
STEP 8
Cool the shrimp. Set aside a few shrimp for decoration, remove the rest from the shell and head (if any).
STEP 9
Place the peeled shrimp in a blender bowl. Pour in 100 ml of broth.
STEP 10
Beat the mixture with a blender until the consistency of a homogeneous puree.
STEP 11
Pour the resulting shrimp puree into the remaining broth. Mix well. Pour everything into a saucepan and put on fire. Bring to a boil.
STEP 12
While the soup is boiling, take a frying pan, heat it a little on the stove and pour flour into a dry frying pan. Fry it over low heat, stirring constantly until light golden brown.
STEP 13
Pour the cream into the flour and mix thoroughly with a spatula so that there are no lumps. Simmer for about 2 minutes until the mixture thickens slightly and remove the frying pan from the heat. If you can’t get rid of the lumps, it doesn’t matter, you just need to rub the resulting sauce through a sieve. Take cream of any fat content, the calorie content of the dish will depend on this.
STEP 14
Pour the creamy flour mixture into the boiling soup in a thin stream, stirring constantly. Cook the cream soup for another 1 minute and remove from heat.
STEP 15
Pour the cream soup into bowls. Sprinkle with paprika (optional), garnish with reserved shrimp and parsley or dill. Bon appetit!
