    For the filling, remove the zest from the orange and mix with sugar. The amount of sugar can be adjusted to your taste.

    Divide the dough into 3 parts, roll each into a round layer. We level it on a plate (mine is 24 cm in diameter) and cut it into 12 equal segments. From the scraps I made another layer. Sprinkle the segments with zest and sugar. You can also lightly roll over it so that the filling sticks a little.

    Roll the bagels from the wide end to the narrow end. Place on a sheet covered with oiled parchment. Brush the top of each bagel with beaten egg and sprinkle with the remaining sugar. I made 48 small bagels.
