Excuse me, dear author of the post, explain what is the point of cooling the finished dough if all the ingredients in it are already cold from the start? I made similar cookies from cottage cheese and butter without eggs according to another recipe, but the butter had to be used at room temperature (softened), and then I actually melted it, the dough rolled out perfectly, didn’t stick, and the cookies didn’t come out stale. I have doubts about your recipe. Now I kneaded the dough with great difficulty, the butter was taken straight from the refrigerator, cut into pieces, the dough is difficult to knead, the butter is hard, cold, the cottage cheese is also from the refrigerator, everything is cold, my hands are frozen. I didn’t dare use the blender, and rightly so, I would never scrape the dough off it for the life of me, it’s sticky. For now I put the lump in the refrigerator (let me remind you, the dough is already cold). I don’t think it will be possible to roll it out, unless you take it with a spoon and form cookies. It will, of course, turn out delicious, because... The ingredients are all fresh and of high quality, but the dough itself is unpleasant to work with because everything is cold!
