STEP 1
How to bake a royal cheesecake with cottage cheese in a classic oven? Prepare all the necessary ingredients. Place the butter in the freezer for 10-15 minutes until it freezes; we will grate it. STEP 2
Be sure to sift the flour for the dough; this process will enrich it with oxygen, which will make the baked goods airy and crumbly.
STEP 3
Add sugar, salt and soda to the flour, mix well with a whisk.
STEP 4
Remove the frozen butter from the freezer and quickly grate it. Now you will understand why we froze it; it would not have been possible to grate soft butter.
STEP 5
Dip your hands into the flour and start rubbing it with the butter. Do this as quickly as possible so that the butter does not have time to melt from the warmth of your hands. If this happens, the dough will become tough when baking. When the butter is coated in flour and does not melt, the dough will be crumbly. Grind flour and butter until fine crumbs form. If the crumbs are too loose and fine, add 1-2 tablespoons of cold water and grind a little again. Put it in the refrigerator.
STEP 6
How to make the filling? Before this, you can turn on the oven to warm up. Set the temperature to 180°C. Take cottage cheese, add sugar, vanilla sugar and eggs. Be sure to wash the eggs with baking soda, as they may contain harmful bacteria. Vanilla sugar can be replaced with vanilla on the tip of a knife. If you use more, it will add bitterness to the baked goods.
STEP 7
Mix the cottage cheese and additives well. I had soft cottage cheese, all I had to do was work with a whisk. If the cottage cheese is dry and grainy, then beat the filling with an immersion blender.
STEP 8
Remove the dough from the refrigerator. Lightly grease the mold with vegetable oil. Sprinkle half of the crumbs into the bottom of the pan and use your hand to start forming the base. Press lightly with your fingers to create the bottom and sides. The dough comes together easily.
STEP 9
Spread the curd filling evenly on top.
STEP 10
Pour the second half of the dough onto the cottage cheese and carefully level it over the entire surface.

Bake the cheesecake for about 45-60 minutes at 180°C. My oven bakes for a long time, I left it on for about an hour, at the end I turned on the convection mode for a golden brown crust.
