  1. STEP 1

    STEP 1

How to cook soup with smoked pork ribs? Prepare ingredients for making soup. It is better to take split peas; they boil better and faster. It is better to cut the ribs into small pieces. Use good water for soup, from a filter or bottle; the taste of the soup depends on its taste.

  2. STEP 2

    STEP 2

Peel the onion. Set aside one onion, we will cook it whole, cut the second into small cubes.

  3. STEP 3

    STEP 3

Wash and peel the carrots well. Leave one carrot whole for the broth, grate the second on a coarse grater.

  4. STEP 4

    STEP 4

Wash and peel the potatoes. Cut the tubers into cubes or bars. Cover the potatoes with water to prevent them from browning while the soup cooks.

  5. STEP 5

    STEP 5

Take a large saucepan and pour water into it. Place the ribs in it, after washing them well. Rinse the peas under running water until the water runs clear. Add the peas to the pan with the ribs.

  6. STEP 6

    STEP 6

Place the pan on the stove over medium heat. Wait until it boils, remove the foam with a slotted spoon. Reduce heat and leave the broth to simmer for one hour.

  7. STEP 7

    STEP 7

After an hour, the peas will be well boiled. Add the onion and carrots, left whole, to the soup. Add salt. Please note that the ribs are salted, they will give up some of the salt to the broth, so you need to add less additional salt. Leave the soup to cook for another half hour.

  8. STEP 8

    STEP 8

While the soup is cooking, fry the vegetables. To do this, heat a frying pan and pour vegetable oil onto it. Add onions and carrots. Fry the vegetables over low heat, stirring them until golden brown.

  9. STEP 9

    STEP 9

After half an hour, remove the onion and carrots from the soup. Add chopped potatoes. Cook the potatoes for another 5 minutes.

  10. STEP 10

    STEP 10

Add the roast to the soup, add peppercorns and bay leaves. Wait for the soup to boil, boil it for a couple of minutes. Then turn off the heat, cover the pan with a lid and let the soup brew a little.

Instead of smoked ribs, you can use sausage.

I really love pea soup, but as a rule I make it on a whim. I decided to create a classic pea soup with smoked ribs. I made it strictly according to the recipe. The soup turned out to be very rich and tasty. But in the allotted time, my peas boiled into porridge, and the result was a soup a la puree. I was only happy about this. But if someone loves the classics, then pay attention to the quality of the peas. The next day my soup was completely jellied. I really liked that the meat came off the bone on its own. I will treat myself to this soup in the future.

A simple and reliable classic recipe. Spices can be adjusted to taste. It can be even simpler, which slightly affects the taste. I just like a lot of pepper, etc., so I do without frying. Lazy.

The soup turned out great! Thank you very much! Much depends on the products, the first time I came across peas already poured into a jar, so the manufacturer is unknown. After soaking overnight, it boiled into porridge in the first half hour. Regardless, the soup turned out amazing. The second time there were peas from Spar, even after soaking and cooking, they only started to fall apart after an hour. The second time there weren’t enough ribs, I was preparing a large portion, I had to add Krakovskaya, but it was very fatty, the solution was to fry the chopped ones, this added flavor and variety. Thanks for the recipe!

No, first you need to cook the broth from ribs, carrots, onions and spices, and only then add peas and everything else.
