Classic Lover salad with beets, carrots and raisins

STEP 1
How to make the classic Mistress salad with beets, carrots and raisins? Prepare your food. Choose medium-sized vegetables so that they weigh approximately the same (carrots and beets). Take natural, high-quality cheese, without vegetable fats. Raisins - seedless, nuts - already peeled. You can make mayonnaise yourself.
STEP 2
Wash the carrots, peel and grate on a medium grater. I recommend medium - on a large salad it will turn out to be coarse, on a small one it will be too puree-like. If the carrots are very juicy, then squeeze out a little juice, otherwise the finished salad may “float”. Transfer the carrots to a separate bowl.
STEP 3
Grate the cheese on the same medium grater. Also put it in a separate bowl.
STEP 4
The beets for the salad are boiled. How to cook beets? Wash the root vegetables well, place them in a saucepan and cover with cold water. Set to cook over medium heat. After boiling, reduce the heat and cook the beets for 1-1.5 hours, depending on the size. Check readiness with a knife - it should easily pierce the vegetable. Cool the finished beets and peel them. Grate it on a medium grater.
STEP 5
Prepare the raisins. How to steam raisins correctly? Pour hot water over the well-washed raisins and leave for 10-15 minutes. During this time it will become soft.
STEP 6
Drain and pat dry with paper towels.
STEP 7
Add raisins to bowl with carrots. Put two tablespoons of mayonnaise in it and mix.
STEP 8
Peel the garlic and pass through a press into a bowl of cheese. Add mayonnaise (2 tablespoons), stir.
STEP 9
Place the remaining two tablespoons of mayonnaise in the beets and stir. In general, you can adjust the amount of mayonnaise depending on the juiciness of the resulting ingredients. For example, I added more to cheese and less to beets.
STEP 10
The Mistress salad is laid out in layers, in a salad bowl, or on a plate using a ring. Place carrots and raisins in the first layer. Press it down with a spoon.
STEP 11
Next, add a layer of cheese and compact it as well.
STEP 12
The last layer is beets. Some recipes add nuts to the beet layer; I decided to simply place them on top of the salad. See according to your taste.
STEP 13
Finely chop the nuts with a knife. You can pre-dry them slightly in a dry frying pan - the nuts will become more flavorful.
STEP 14
Sprinkle nuts over the top of the salad. Remove it from the ring and serve. The salad does not require time to soak, since the layers are not coated with mayonnaise, but mixed with it. Bon appetit!
