It is better to use freshly ground pepper - it is more aromatic. A sprig of thyme is perfect for greenery.

    Start with the marinade. In a separate container, mix oil, salt, pepper and chopped herbs, squeeze lemon juice into it. Add the amount of lemon juice, salt and pepper to your taste.
