Christmas Cake Dundee

A fragrant, tender cake from Scotland, try it too! Dundee Christmas cake is a traditional Scottish Christmas cake. I add a lot of dried fruits and candied fruits to this cupcake, which you can choose to suit your taste. It, just like the German Stollen, only becomes tastier over time. After baking, the cake is allowed to cool completely, wrapped in foil or film and left in a cool place for 2 weeks to several months. Over time, dried fruits give up their aroma and moisture to the dough, the aromas are mixed and infused. Try it too, you'll like it!

Step-by-step preparation

Cooking timeCooking time: 1 hr 40 mins
  1. STEP 1

    STEP 1

Products for kneading dough. We will also need dried fruits (you can choose according to your taste, you can increase the amount of dried fruits).

  2. STEP 2

    STEP 2

2 types of raisins, pineapples, cranberries. Wash the dried fruits, dry them on paper towels, soak them in cognac and vanilla tincture, and leave for 2 hours.

  3. STEP 3

    STEP 3

Peel the zest from the lemon and squeeze out 3 tbsp. l. juice Grind 50 g almonds into flour.

  4. STEP 4

    STEP 4

Cream butter at room temperature with sugar (add sugar in small portions).

  5. STEP 5

    STEP 5

Add 4 eggs to the oil one at a time, beating thoroughly after each.

  6. STEP 6

    STEP 6

Add lemon zest and juice, ground almonds. Mix.

  7. STEP 7

    STEP 7

Sift the flour with baking powder and add it in parts to the butter mixture, stir until smooth.

  8. STEP 8

    STEP 8

Add dried fruits. Mix gently, distributing the dried fruits over the dough.

  9. STEP 9

    STEP 9

Pour the mixture into the prepared pan and level it out.

  10. STEP 10

    STEP 10

Place peeled almonds on top in a circle (almonds are very easy to peel if you soak them in boiling water for a few minutes). And bake in a preheated oven at 160C for about 1.20 - 1.30 hours. Since the dough is quite heavy and takes a long time to bake, we check the readiness with a skewer (it should be without traces of sticky dough).

  11. STEP 11

    STEP 11

Since I had a little dough left, I baked small cupcakes (baked for 35 minutes).

  12. STEP 12

    STEP 12

    Bon appetit!

An excellent culinary recipe, it is written very clearly and the photos are taken step by step - everything is clear and accessible. In the last photo - just serve it on the New Year's table - like a cone from a Christmas tree)) I'll try to cook it for Christmas. I wonder if this will work in a slow cooker or convection oven? If, for example, you put almonds on the bottom and put the dough on top. And with the filling, as for me, you can experiment - it will still turn out delicious)

Yes, Irisha, one more cake for Christmas, although it won’t have time to ripen, but a week is also time, for our places this will be enough, there are so many beautiful holidays ahead, you can hold it and serve it at any of them. My curd stollen is waiting for its turn, every day I go up, smell it, check for freshness, everything seems to be fine. And I will definitely prepare this one and take it to the children by the end of January - it will just ripen. I don’t know if I’ll find dried cranberries, but cherries are definitely on sale, can I replace them? But I like the brick shape better, it somehow looks more like a cupcake, but This is just my opinion and for me, did you offend anyone? Excellent recipe, Irisha - you are a great master))) I will prepare Kesk Irishin, For any holidays, There will be something to serve for the feast, This is all from the classics! Happy upcoming holidays everyone!

Thank you very much everyone for your kind words!! Cat, yes, you can select dried fruits to suit your taste, the main thing is that there should be at least 400 g of them, and better yet more :) what about baking in a slow cooker or convection oven, if you have experience baking in them, then why not, This is essentially a Shura cupcake, try baking it, I’m just delighted with this cupcake, it’s so fragrant and tender. If there is no time to stand, then it is advisable to leave it at least overnight, then its structure will become a little denser and it will not crumble when cutting, and during this time the dried fruits will already “relax” and begin to release aroma, and you can choose any baking form, I just especially liked the decoration with almonds on top, it looks very beautiful on the round cupcake Natasha, just try not to spoil them :) they are already so used to homemade baking that they are just waiting for something new and delicious

What a delicious cupcake! I felt like I even smelled the smell. But I learned for the first time that cupcakes can ripen, I thought that only the fresh ones are the most delicious. I was very interested in the recipe.
