Chocolate New Year cake

Break five fresh eggs into a large bowl, add a little salt and beat with a mixer into a light foam.

Add sugar little by little and continue to beat thoroughly with the mixer.

Beat into a good egg-sugar mixture.

Sift the flour and cocoa into a plate.

Place cocoa and flour in parts into the egg-sugar mixture.

Gently mix with a spatula, maintaining airiness.

The result was a dough with the consistency of thick sour cream.

Place the dough in a cake pan lined with parchment paper on the bottom and sides.

The dough should stand for 15-20 minutes to rise. Turn on the oven at 165-170 degrees and place our form with the dough in it for 40 minutes, after which we let it stand for another 10 minutes with the oven turned off.

Cut the prunes into pieces.

Place the prunes in a bowl, pour in cognac and cover with a lid.

Divide the finished sponge cake into three identical layers.

Drain the prunes through a sieve, removing excess liquid.

Beat cold cream with a mixer until light foam.

Add boiled condensed milk to the cream.
STEP 16

Continue beating until good and dense foam.

We coat the first cake well with cream, leveling it with a spatula.

Place prunes on cream.

Place the roasted walnuts in a bag and lightly crush them with a masher.

Add walnuts to prunes.

Cover the top with the second cake layer, coat it and decorate it in the same way as the first one. Place the third layer and put the cake in the refrigerator.

Let's start preparing ganache - cream made from heated chocolate.

and mix the ingredients thoroughly with a mixer.

Apply ganache to the cake and use a spatula to fill the top and sides.

Apply the ganache in a second, thinner layer and level with a spatula.

Roll out the mastic with a rolling pin to a thickness of 3 mm. layer.
STEP 28

We wrap the mastic on a rolling pin, then apply it to the cake and smooth it with an iron and glue it.

After which we begin to decorate our birthday cake.
