STEP 1

How to bake chicken in caramel with a golden crust in the oven? To do this, you will need a minimum set of ingredients. You can replace the chicken with turkey. But keep in mind that in this case the cooking time and calorie content of the dish will change.
STEP 2

Rinse the chicken and pat dry with paper towels. There should be no moisture left on the carcass, otherwise the marinade will drain from the skin without stopping.
STEP 3

Now prepare the marinade. Honey needs to be liquid, not sugared. If the honey is candied, melt it on the stove or in the microwave. You can use any honey, but it is advisable that it be thicker and darker. I have buckwheat. In a bowl, mix liquid honey, soy sauce, wine vinegar, brown sugar and spices. You can use spices ready for poultry or make your own mixture from suneli hops, a mixture of ground peppers, paprika, curry and dry garlic.
STEP 4

Beat everything with a fork until smooth and the sugar is completely dissolved. If desired, you can simmer the marinade over low heat until it becomes viscous. Typically, little vegetable matter is added to such marinades. But due to its fat content, it does not combine well with the other ingredients and does not linger on the chicken, flowing down. And we need to ensure that the marinade sticks to the skin.
STEP 5

Using a brush, coat the chicken with the marinade inside and out. Leave to marinate for at least 30 minutes, preferably 1 hour. Transfer the chicken to a baking dish and brush with marinade again. Leave a little of the marinade to brush the bird as you go. To prevent the wings from burning when baking, wrap them in foil.
STEP 6

Bake in an oven preheated to 180°C for about 1.5 hours. Focus on the features of your oven. From time to time, brush the bird with marinade from a bowl or the bottom of the pan. The secret to a beautiful, even caramel crust is frequent brushing with marinade and turning the bird on different sides.
STEP 7

The marinade holds up much better on a hot bird, it gradually turns the chicken golden brown, and sugar and honey form a beautiful caramel crust. The exact baking time depends on the weight of your bird and the features of your oven. Transfer the finished chicken to a plate. Garnish with grapes, halved tangerines and mint. Bon appetit!
