Chicken shortbread cookies with jam

Crumbly, very tender, with a creamy taste! Preparing Kurabye, shortbread cookies with jam, is not difficult and does not take much time. The main thing is to have a pastry bag with curly tips on hand. So that the cookies are as similar as possible to the ones from childhood.

  1. STEP 1

    STEP 1

How to make chicken shortbread cookies with jam? Prepare the necessary ingredients for this. The butter should be soft, so remove it from the refrigerator in advance and leave it at room temperature to warm up. I don’t recommend replacing butter with margarine, since butter makes the cookies crumbly.

  2. STEP 2

    STEP 2

To make the butter softer faster, cut it into pieces. To prepare the dough, take a comfortable, spacious bowl. Combine soft butter and powdered sugar in a bowl. Mix until the powder begins to dissolve. It is advisable to use a mixer to beat the butter.

  3. STEP 3

    STEP 3

Then add the egg whites to the bowl. Mix all ingredients.

  4. STEP 4

    STEP 4

Sift the flour through a sieve. This will saturate it with oxygen and the dough will be more tender. The finished products will be more crumbly. Add flour into the bowl gradually and knead the dough. A mixer is not needed here. You can get by with a wooden spatula.

  5. STEP 5

    STEP 5

It may take a little more or less flour. Be guided by the consistency of the finished dough. You don't need to knead it for a long time. As soon as the dough comes together, do not add more flour. If you continue kneading, the dough will require more and more flour, eventually it will become dense, and the finished products will be tougher.

  6. STEP 6

    STEP 6

The dough turns out very soft. Place it in a silicone bag with a large nozzle.

  7. STEP 7

    STEP 7

Line a baking tray with parchment and press the cookies over the entire surface. Make small indentations in the center.

  8. STEP 8

    STEP 8

Place a little thick jam into each cookie. The jam can be of any flavor, the main thing here is its thickness. Place the baking sheet in the oven, preheated to 190 degrees, for 20-30 minutes. When baking, use your oven as a guide.

  9. STEP 9

    STEP 9

The finished cookies will be a beautiful golden color. Remove it from the oven and immediately remove it from the baking sheet so that it does not burn. Cool the cookies and help yourself. Bon appetit!

This is the third time I’ve prepared kurabiye. Twice the cookies didn’t turn out well - they fell apart during baking. Probably the proportions of the ingredients were somehow incorrect. This is the third time I have made this recipe. It turned out to be a good dough, the cookies hold their shape both when deposited and during baking. But in order for the result to be as beautiful as the author’s, you need a “French star” attachment (or hands so that they grow from the right place), I didn’t have one. And one more thing - it’s not for nothing that the recipe says to use a SILICONE pastry bag and a LARGE nozzle (the first time I had to throw away two disposable bags). Well, about the result. Maybe in the photo my chicken shortbread cookies with jam are not as beautiful as the author’s, but they are very tasty! The cookies are crumbly, aromatic, with a delicate creamy taste and sourness from jam!!! I will definitely only use this recipe from now on. Thanks to the author!

You need to add flour very carefully; you may need much less of it. I used 300 g, the dough turned out very tight, I could barely squeeze it out.
