Chicken parfait

    Fry chopped onion and garlic in olive oil.

    Add chopped liver. Fry. Sprinkle with thyme. Fry until golden brown and pink in the middle. Light the brandy in a separate container to burn off all the alcohol. Add brandy to the liver. Fry for another 1 minute.

    Transfer the liver to a blender. Grind.

    Melt the butter. Strain the liquid through a sieve. Do not use white precipitate. Add oil, salt and pepper to the liver. Mix. Pass the mixture through a sieve twice.

I love chicken liver. I often make it for lunch, add it to salads, but most of all I love pates. This time I decided to make chicken parfait according to the author’s recipe. I cut the onion and liver coarsely. I slightly changed the order of preparation than the author recommends. 📝 First I fried the liver, then added the onions. I poured in a little water and put it out. I always add spices to taste and a little more brandy than the author indicated and evaporate the alcohol over high heat. I mixed all the ingredients in a blender. I poured it into the molds and added melted butter. Mmm it turned out very tasty! I recommend.
