STEP 1
How to make stewed chicken fillet with vegetables in a frying pan? Prepare the ingredients according to the list. Vegetables can be used either fresh or frozen. For contrast, it is better to use multi-colored bell peppers. If you want the dish to be more satisfying and nutritious, you can add potatoes to the ingredients. Wash the chicken fillet, dry with paper towels and cut into cubes.
STEP 2
Peel the onions and cut into feathers or halves of rings. To prevent the onion from stinging your eyes when slicing, rinse it and the knife with cold water.
STEP 3
Wash the carrots, peel and grate on a medium grater.
STEP 4
Wash the bell pepper and cut out the stalk with seeds. Cut the pulp into strips. If using potatoes, wash, peel and cut into strips.
STEP 5
Wash the zucchini and, if desired, remove the skin and seeds. If the zucchini is young, you can use it together with the skin and core. Cut the zucchini into small cubes.
STEP 6
Wash the eggplants and cut into strips. To remove the specific bitterness of the vegetable, salt it and leave for 15 minutes, then squeeze out the juice and rinse the eggplant. Rinse the broccoli, dry it and divide it into small inflorescences.
STEP 7
Wash the tomatoes and cut out the place where the stalk attaches. If the skin of the fruit is thick, you can remove it by making a cross-shaped cut on the tomatoes and pouring boiling water over them. Cut the pulp into cubes or pieces of any shape.
STEP 8

Place the carrots and onions in the frying pan and fry the vegetables, stirring, over medium heat for about 3 minutes until soft.
STEP 9
Add the chicken fillet to the vegetables and stir.
STEP 10
Fry everything together for 5-7 minutes until the meat turns white.
STEP 11
Next add bell peppers, zucchini, eggplant, broccoli and tomatoes to the pan and mix everything at once. Fry the vegetables and chicken over medium heat for about 7 minutes until the vegetables release their juices. Add salt and ground black pepper to taste. If desired, you can add any other seasoning to taste. Pour in a third of a glass of water. Reduce heat to low and cover the pan with a lid.
STEP 12
Simmer vegetables with chicken for about 20 minutes. During this time, almost all the liquid should evaporate. Stir the dish, arrange on plates and serve.
