    Wash the zucchini. If it has a hard peel, then it needs to be peeled. Young zucchini can be used with the peel on. Grate the zucchini. For a more uniform consistency, you can use a fine grater. Squeeze out excess liquid from the grated zucchini.

    Add the squeezed zucchini to the bowl with the minced meat. Then add the egg. Sprinkle everything with a little salt and spices to taste. For spices I use a mixture of ground peppers and paprika. Mix all ingredients well with each other.

    Depending on the consistency of the cutlet mass, add 2-4 tablespoons of semolina. It will make the consistency a little thicker and denser. Instead of semolina, you can use starch or flour.

    Place breadcrumbs in a small plate. Take some cutlet mixture, roll in breadcrumbs and form cutlets with your hands.

I came across this recipe by accident; I had never cooked chicken cutlets with zucchini. This combination interested me. I made cutlets for dinner using this recipe for a vegetable salad. I twisted the chicken fillet with onions and garlic through a meat grinder. I grated the zucchini on a grater with medium holes and squeezed out the moisture. I mixed the minced meat with the zucchini, beat in the egg, and added salt and pepper from the spices. At the end, I poured in the semolina, stirred and let the minced meat sit for a while so that the semolina swells. The minced meat turned out very tender. I made cutlets with wet hands and rolled them in breadcrumbs. Fry over medium heat until golden brown on both sides. The recipe is not complicated, and I was pleased with the result. The cutlets came out incredibly juicy, thanks to the zucchini. They are soft and tender on the inside and crispy on the outside. They are so delicious that you can't stop eating them. By the way, the zucchini is absolutely not noticeable in the cutlets. Everyone ate it with great pleasure, even the child devoured several pieces at a time.
