Chicken breast with oranges in sweet and sour marinade

If you use frozen breast, it is better to defrost it naturally at room temperature. Wash the breast, dry it, remove the skin. Using a sharp knife, carefully separate the meat from the bone. Divide the fillet into medium-sized pieces.
STEP 3
Let's make the marinade. For this dish, the marinade plays a major role. Since the breast is the dry part of the bird, we need to give the meat juiciness. A marinade containing lemon juice will cope with this task perfectly. So, squeeze the juice out of two lemons. You can use a citrus juicer.
STEP 4
For the marinade, take a spacious, convenient container in which the breast will then be marinated. Wash the parsley, dry it, and chop it finely. Combine lemon juice, honey, olive oil, parsley, herbs de Provence, basil, salt. Mix everything well. You can use any aromatic herbs to taste that are suitable for roasting chicken.
STEP 5
Dip chicken breast pieces into the marinade. It is advisable that the chicken be covered with liquid as much as possible. This must be taken into account when choosing dishes. Let the breast marinate for 1 hour.
STEP 6
After the time has passed, transfer the fillet to a baking dish along with the marinade. Bake in an oven preheated to 200 degrees for about 35 minutes. During this time, the marinade will partially evaporate.
STEP 7
Wash the orange and cut it into thin slices with a sharp knife.
STEP 8
Remove the pan with the chicken breast from the oven, place orange slices on top and between the pieces. Place the pan back in the oven for 15 minutes. Remove and serve immediately. Bon appetit!
