STEP 1
How to bake charlotte with apples in sour cream in the oven? Prepare the necessary ingredients for the dough. Be sure to sift the flour. The splendor of the baked goods will depend on this. For eggs, take either three large eggs or 4-5 small ones. Corn starch can be replaced with potato starch, but use half as much. Sour cream can be of any fat content. Rinse the raisins, pour boiling water over them and leave for 10-15 minutes. Then drain the water and dry the raisins with paper towels.
STEP 2
In a large bowl, combine the flour, ground cinnamon, and cornstarch sifted with baking powder. Stir the dry mixture. Baking powder can be replaced with 1 tsp. baking soda, quenched 1 tbsp. 9% vinegar. It is important not to overdo it with soda, otherwise the baked goods will acquire a specific taste. Starch absorbs moisture well, making baked goods light and airy.
STEP 3
Peel the walnuts and finely chop them with a knife. You can grind them in a blender, but not very finely. It will be tastier if you can feel the nuts in the pie. Lightly dry them in a dry frying pan (about 2-3 minutes). Thanks to this, the aroma and taste of nuts will become brighter and richer. To save time, prepare the nuts immediately for the filling. Pour the required amount into a separate plate and set aside.
STEP 4
In a separate container, combine the eggs with sugar and beat with a mixer at low speed until fluffy. The egg mass should lighten, increase in volume and thicken a little.

Add sour cream to the egg mixture and beat again until smooth.
STEP 6
Add the dry flour mixture to the sour cream mixture in portions. Do not stir the dough for too long. This will retain more air bubbles, and the finished cake will be more airy. If necessary, add a little flour (1-2 tbsp. L), achieving the desired consistency. The dough should flow from the spatula in a wide ribbon, resemble thick sour cream in thickness, be smooth and without flour lumps.
STEP 7
Add roasted chopped walnuts and steamed raisins to the dough. Stir thoroughly so that the dried fruits are distributed throughout the dough.
STEP 8
Prepare all the necessary ingredients for the filling. Which apples are best? Choose green apples that have a sweet and sour taste and are not very juicy so that the pie does not turn out soggy. The fruits must be dense so that they retain their shape when baked. Soft and loose fruits in the oven will turn into porridge, which will negatively affect the taste and external qualities of the charlotte. Turn on the oven to 180 degrees in advance.
STEP 9
Wash and dry the apples. There is no need to remove the skin unless it is damaged or stained. Cut the fruits in half. Remove the center with the seeds. Cut the apples into slices or small cubes. To prevent them from darkening, sprinkle them with lemon juice (1-2 teaspoons). The cutting shape may be different. If desired, cut the fruit into medium-sized cubes.
STEP 10
Add pre-prepared fried chopped nuts to the apples. Add sugar. You can replace it with cane sugar. It will give the pie a pleasant caramel aroma and taste. Add raisins, pre-steamed and dried with paper towels, and a pinch of ground cinnamon. It is important to note that if you take more cinnamon than necessary, the baked goods will taste bitter.
STEP 11
Mix apples well with nuts, sugar, cinnamon and raisins. Instead of raisins, you can use dried berries, such as cranberries. There is no need to steam them in hot water.
STEP 12
Line a round baking pan with parchment paper. Lightly grease with vegetable oil. Sprinkle the bottom and sides of the pan with semolina. Lay out the third part of the dough. Level the surface with a silicone spatula.
STEP 13
Spread half of the apple filling on top. Cover the apple slices with the second part of the dough and place the apples again.
STEP 14
Pour the remaining batter over the fruit and smooth it out. Bake the charlotte with apples for about 40 minutes in an oven preheated to 180 degrees. It is important not to open the oven for the first 15-20 minutes of baking, otherwise the biscuit will settle. Keep in mind that ovens may vary. Therefore, the temperature regime may need to be changed up or down. Baking time may also vary slightly.
STEP 15
How to check if the pie is ready? When you see that it has noticeably increased in size and browned, pierce it with a wooden skewer in several places. If it comes out dry, without any raw dough sticking to it, then the pie is ready. Remove the charlotte from the oven. Leave in the pan until cool. Then carefully transfer to a flat dish, remembering to remove the paper. Generously sprinkle powdered sugar on top through a fine strainer. Enjoy your tea!
