    How to make chapatis - Indian flatbreads made with water? Prepare your food. You will need very little of them - two types of flour, rye and wheat, water and salt. The water needs to be warm, so boil half a glass in advance and cool slightly.

    Take a large, comfortable bowl in which you will knead the dough. Sift the wheat flour into it first and then the rye flour. Do not skip this step; sifting will not only remove possible debris, but will also make flour products of higher quality.

    Add the salt and stir the dry ingredients until the salt is evenly incorporated. Make a small well in the flour mixture.

    Pour warm water into it in small portions. Knead into a soft and pliable dough. Since flour varies greatly in quality, kneading may require more or less water, so be guided by the consistency of the dough.

    You don’t need to knead it for a long time; it will be enough to simply gather the dough into a ball and place it directly in the bowl for a few minutes. Cover the finished dough with a damp towel and leave for 10-15 minutes, it should rest a little. During this time, the flour will absorb all the liquid and the dough will become more elastic.

    Divide the rested dough into 6-8 parts (I recommend dividing by 6, then the cakes will be about 20-22 cm in diameter).

    Roll each part into a flat cake about 2 mm thick. To prevent the dough from sticking, lightly dust your work surface with flour.

    Heat a frying pan over moderate heat. Place the flatbread on a dry frying pan. Once the bottom of the tortilla is lightly browned and bubbly, turn it over to the other side.

    And fry it for literally 1 more minute. The cakes bake quite quickly, so be careful not to overcook them, otherwise they will dry out and become brittle.

    Place the finished flatbread on a board or plate and brush the top with melted butter (for a lean version, you can leave it alone or brush it with vegetable oil). Thanks to the butter, the flatbreads become more tender. Cover the hot cakes with a slightly damp towel on top to prevent them from drying out, or transfer them to a container with a lid.

It’s amazing how good Chapati Indian flatbreads are on water. I'm surprised that the recipe has few fans. Checked! Observing the proportions and technology specified by the author, the result is a great mood and nutritious bread. I always start working with dough by turning on my intuition and only in my favorite apron with chickens (my amulet).. Due to the fact that the author of the recipe clearly refers to the national dish, I would like to note: - coarse flour is used, the highest grade will not be appropriate.
