STEP 1
How to cook celery soup for weight loss? Prepare all the necessary ingredients.
STEP 2
Take the cabbage, remove the top dirty leaves, wash under running water, and dry. Thinly slice the cabbage and set it aside, we will need it in the next steps.
STEP 3
Take celery, wash under running water, dry and cut into medium-sized cubes.
STEP 4
Pour water into the pan. Place cabbage and celery in it. Take an onion, peel it and add the whole one to the cabbage and celery. Place the pan on the fire and bring to a boil. Cook for about 7 minutes over medium heat, uncovered. At the end of cooking, remove the onion from the soup; it will no longer be needed, since it has already given all its flavor to the broth. If desired, the onion can be cut into small cubes rather than boiled whole.
STEP 5
While the vegetables are boiling, take the tomatoes, wash them under running water, and dry them. Make cross cuts on the top of the tomatoes, scald with boiling water and remove the skin. Scalding with boiling water will help remove the tough skin from the fruit, while the tomatoes will retain their shape. Cut the pulp into medium cubes. Set aside, let's get back to the tomatoes later.
STEP 6
Wash the bell pepper, dry it, cut it into two parts and remove seeds and stems. Cut the pepper into cubes. Set it aside, we'll need it soon.
STEP 7
Take the zucchini, wash it under running water, dry it, peel it and cut off the stalk. If you have a young zucchini, then you don’t need to remove the skin, just wash it well. Cut the zucchini into medium cubes.
STEP 8
Add zucchini, tomatoes and bell peppers to the pan. Season with salt and pepper. Cook, stirring occasionally for about 20 minutes, until the vegetables are tender. If you wish, you can add your favorite spices and seasonings.
STEP 9
Let the finished soup brew under the lid for about 10 minutes, after which you can pour it into plates. Add 1 tbsp to each plate. l. lemon juice and chopped herbs. Adding lemon juice is optional, but it will brighten the flavor. You can use any greens to suit your taste.
