Carrots with sugar salad

STEP 1

How to make fresh carrot salad with sugar? Prepare your food. Choose juicy, sweet autumn varieties of carrots - they will make the most delicious salad. Any sugar will do, but I like cane sugar better - it gives the salad caramel notes.
STEP 2

Wash the carrots well under running water with a brush. Then clean. The easiest way to do this is with a vegetable peeler - it removes a very thin layer of peel. Cut off the ends of the carrots. Grate the carrots on a medium grater. It is on the medium one that you will get the juiciest salad - a large one will make it coarse, and a small one will turn the carrots into puree.
STEP 3

Transfer the grated carrots to the salad bowl. Pour a little lemon juice over it. In addition to juice, you can take apple or grape cider vinegar, and also use orange juice rather than lemon juice. Vary the amount of sour component to your taste.
STEP 4

Sprinkle the salad with sugar. You can reduce or increase its quantity depending on your preferences. Consider also the sweetness of the carrots themselves.
STEP 5

Season the salad with oil. I used regular refined sunflower, olive or any other vegetable will do. You can also season carrot salad with melted butter, sour cream or cream. But it’s better not to leave it completely without dressing - carotene from carrots is absorbed only along with fat.
STEP 6

Mix the fresh grated carrot salad and serve. This is the most basic recipe. You can add any fruit, dried fruit or vegetables to it to your liking - apple, orange, raisins, dried apricots, Chinese cabbage, bell pepper.
