I love carrot cake! My muffins turned out just great. Exactly six pieces came out. The only change in the recipe: I needed a little less flour, the rest is everything according to the recipe. I baked it in a metal pan, the muffins came away from the walls well and didn’t stick. The dough was placed flush into the cells (you can see it in the photo). The muffins rose slightly above the surface while baking. Inside they are porous, moist, very juicy. The dough is soft and aromatic. And these muffins turned out bright, orange, like the sun. Flax seeds go well with carrot dough. And the carrots themselves are not felt at all, while the muffins are sweet not only from sugar, but also thanks to the sweet and healthy carrots) I dusted the top with powdered sugar. You could also add walnuts to the dough, it would also turn out delicious. Thanks for the recipe, very tasty!

I love baking muffins, a delicious and at the same time easy-to-prepare dessert pastry, and the option with carrots also pleased me, since children don’t particularly like to eat cooked vegetables, and in these small delicious muffins filled with the aroma of cinnamon, the child is not at all will notice the catch. I didn’t change anything in the recipe. While I was cooking, my husband was grumbling that he wouldn’t eat this crap. And in the end I ate almost everything myself))) Thank you very much for the recipe! The muffins turn out very tender, soft, and flavorful. For those who are afraid to cook them with carrots, I will say that the taste of carrots is not felt in baked goods. In fact, all that remains is the rich color. It was strange to me myself, but if you don’t know in advance what they are made of, you won’t guess! The recipe captivated me with its simplicity and speed of preparation - I mixed everything, threw it in the oven for 20 minutes, cooled it and served it with tea - EVERYTHING! I will cook it more than once! Next time I'll experiment with honey.

Great recipe, very simple. The muffins turned out very tender and flavorful, I made them with dark sugar. I didn’t have flaxseed, so I replaced it with a little crushed muesli (so that there were inclusions). Thanks for the recipe!
