  1. STEP 1

    STEP 1

How to prepare carrot caviar for the winter? Prepare the necessary ingredients. It is better to do this preparation during the harvest season, when the carrots are young and juicy. Carrot caviar made from fresh carrots turns out very tasty and tender.

  2. STEP 2

    STEP 2

Wash and peel the carrots. If the carrots are young, then they can be rubbed with a stiff brush under running water without removing the skin with a vegetable peeler. Cut the carrots into large pieces and puree using a food processor or blender. If you do not have such equipment, then you can use a regular meat grinder. Place the prepared carrots in a saucepan or saucepan with a thick bottom.

  3. STEP 3

    STEP 3

Wash the tomatoes, cut out where the stem attaches and cut them into several pieces. If the skin of the tomatoes is hard, you can remove it by first pouring boiling water over the tomatoes and then plunging them into cold water.

  4. STEP 4

    STEP 4

Peel the garlic cloves and cut into large pieces.

  5. STEP 5

    STEP 5

Garlic and tomatoes can be chopped immediately along with carrots using a food processor.

  6. STEP 6

    STEP 6

If you chopped the garlic and tomatoes separately, then place them in a saucepan with the carrots. Add salt, sugar and vegetable oil to the vegetable mixture. Stir the mixture and put on fire. When the mixture boils, turn the heat to low and simmer the vegetable mixture for about 30 minutes. Be sure to periodically stir the vegetable mixture so that the mass does not burn to the bottom of the saucepan.

  7. STEP 7

    STEP 7

Prepare jars for the preparation. It is better to use small jars so that after opening the product will not be stored for a long time. Wash the jars with soda and sterilize. The easiest way is sterilization in the oven. Place the wet jars, neck down, on a cold oven rack and turn it on to 150 degrees. 0.5 liter jars are sterilized in about 15 minutes. Boil the lids and let them dry.

  8. STEP 8

    STEP 8

Then pour in table vinegar, stir and simmer over low heat for about 10 minutes. Carrot caviar is ready.

  9. STEP 9

    STEP 9

Place carrot caviar into prepared jars, packing the mixture tightly up to the shoulders of the jars. Roll up the jars with lids and let them cool at room temperature upside down under a warm blanket. Store carrot caviar in a cool place.
