Cabbage soup with tomatoes, fresh cabbage and meat
Step-by-step preparation
STEP 1
How to cook cabbage soup with tomatoes, fresh cabbage and meat? Prepare all the necessary ingredients according to the list and start by preparing the broth. You can take any meat (pork, beef, chicken), or if you wish, cook it without meat, using meat or vegetable broth or just water. To make the broth more rich, take meat with a bone. It could be a shank, a shoulder blade. I have beef ribs, but they have a lot of meat on them.
STEP 2
Rinse the meat. Place the meat in a pan of boiling water. Add a whole peeled onion, 4 allspice peas and 2 bay leaves to the pan. Cook over low heat for 1.5 hours until the meat is cooked. Add salt at the end.
STEP 3
Peel the potatoes and cut into small cubes.
STEP 4
Shred the white cabbage.
STEP 5
Peel the tomato and cut into small cubes. How to easily remove the skin from tomatoes? Wash them and make cross cuts on top with a sharp knife. Place in boiling water for 1-2 minutes. Remove, cool slightly and remove the skin.
STEP 6
Peel the carrots and cut into small cubes.
STEP 7
Cut the second onion into small cubes.
STEP 8
Wash the dill and parsley, dry and finely chop. If you wish, you can replace or supplement with other herbs, such as green onions, cilantro, or use a mixture of different herbs.
STEP 9
Remove the meat, cool, separate from the bones and cut into small pieces.
STEP 10
Strain the broth, return to the heat and bring to a boil.
STEP 11
Place potatoes in broth. Cook for about 10 minutes.
STEP 12
In a frying pan in vegetable oil, fry the onion for 5 minutes.
STEP 13
Add carrots and fry for another 5 minutes until golden brown.
STEP 14
Transfer the roast into a saucepan with soup.
STEP 15
Add cabbage, remaining allspice and bay leaf. Cook for 10 minutes. You can replace fresh cabbage with sauerkraut.
STEP 16
Add chopped tomatoes. Salt and pepper the soup to taste. Cook for another 2-3 minutes.
STEP 17
At the end, add chopped herbs. Remove the cabbage soup from the heat. Cover the pan with a lid and let the soup steep for about 15 minutes. Bon appetit!
