STEP 1
How to make a salad from fresh cabbage and beets? There is nothing complicated here. To begin, prepare the ingredients according to the list. It is advisable to choose beets that are young, juicy, not flaccid, with elastic skin. If the beets are small, you can take more than 2 pieces. You can use any vegetable oil to your taste. If you don't have apple cider vinegar, you can replace it with regular table or wine vinegar, 6% strength.
STEP 2
Remove the top damaged leaves from fresh cabbage. Shred the cabbage, avoiding the dense, hard leaves around the stalk.
STEP 3
Peel the carrots and grate them using a Korean carrot grater. If you don't have such a grater, you can use a regular coarse grater.
STEP 4
Peel fresh raw beets and also grate them on a Korean carrot grater or on a regular coarse grater. You can replace or supplement the vegetable part to your taste. For example, add bell peppers, radishes, daikon, cucumbers, etc., cut into strips.
STEP 5
Combine cabbage, beets and carrots in a bowl. Add the pressed garlic cloves, vegetable oil, apple cider vinegar, sugar, salt and pepper.
STEP 6
Mix everything thoroughly. Let the salad sit for 10-15 minutes. During this time, salt and sugar will dissolve properly and give the salad a unique taste. Before serving, taste the salad and add more spices if necessary.
STEP 7
Place the prepared salad of fresh cabbage, raw beets and carrots in a heap on a plate and serve. For holiday serving, it is better to first line the plate with lettuce leaves or other greens. Bon appetit!
