STEP 1
I want to share with you a good recipe for a vitamin dish, which after the first try became one of my favorites, and tell you how to cook broccoli puree soup with cream. We take the products according to the list and measure out the required quantity.
STEP 2
Boil chicken eggs hard for 10 minutes, transfer them to cold water to cool, peel them and separate the whites from the yolks. We only need yolks.
STEP 3
Wash the broccoli and separate it into florets.
STEP 4
Wash the leeks and cut them into large rings.
STEP 5
Pour cold water into a saucepan and add the broccoli and leeks to the water. We turn the heat to medium and bring everything to a boil, after which we cook the vegetables for 7 minutes. Then take them out to cool.
STEP 6
Strain the broth through a fine strainer or cheesecloth.
STEP 7
Combine washed and chopped parsley in a deep bowl, as well as leeks and broccoli that have cooled by then.
STEP 8
Grind them using an immersion blender until mushy.
STEP 9
Next, dilute the vegetable mixture with strained broth, put it on low heat and add cream, stir. Cook the soup with constant stirring so that it does not burn. Cream can be replaced with processed cheese. Bring the puree soup to a boil, add salt and pepper to taste, and remove the pan from the heat.
STEP 10
Grind the yolks with chopped garlic until smooth. Add the mixture to the soup and stir gently.
STEP 11
Broccoli and leek soup is ready to serve, enjoy your meal!
