  1. STEP 1

    STEP 1

How to cook boletus soup? Prepare the necessary ingredients for this. Choose small mushrooms. Large mushrooms will turn into a shapeless mass when cooked, so it is better to dry them.

  2. STEP 2

    STEP 2

Clean the mushrooms from twigs and leaves. Cut the mushrooms into large pieces. They will shrink further in size when cooked. Rinse the mushrooms in water. Then fill with clean water, put on fire and bring to a boil. Boil the mushrooms for 10 minutes.

  3. STEP 3

    STEP 3

Then drain them in a colander and rinse again in cold water.

  4. STEP 4

    STEP 4

To prepare the soup, peel the potatoes and cut them into pieces. Rinse the rice several times.

  5. STEP 5

    STEP 5

Pour water into a cooking pot and bring to a boil. Place the chopped potatoes and rice in the pan. Leave to cook for 10 minutes.

  6. STEP 6

    STEP 6

Peel the onions and carrots, rinse and chop. Then fry for 2-3 minutes with the addition of a small amount of vegetable oil.

  7. STEP 7

    STEP 7

Add boiled mushrooms to the fry. Fry everything together for another 3-5 minutes.

  8. STEP 8

    STEP 8

Place the fried mushrooms in a saucepan. Add a little salt and spices to taste. In mushroom soup, you should not get too carried away with spices, so as not to interrupt the special aroma of mushrooms. Ground pepper will be enough.

  9. STEP 9

    STEP 9

Boil everything together for another 5-7 minutes and remove the pan from the heat. Boletus soup is ready!

  10. STEP 10

    STEP 10

    Bon appetit!

I was treated to frozen wild mushrooms, and I wanted to cook mushroom soup with boletus. While potatoes and rice were boiling in a saucepan, I fried onions, carrots and mushrooms in a frying pan (my mushrooms had already been boiled before freezing, so I skipped this step when cooking). The soup turned out very tasty, filling and aromatic! As for spices, I used only ground black pepper, and when serving I added dill. Thanks for the recipe, Julia M!
