STEP 1
How to bake wild boar meat in the oven? Prepare all products according to the list. If you have frozen meat, you need to defrost it first. Read about all the intricacies of proper defrosting in a separate article, link at the end of the recipe. For the recipe, I used the femoral part of the animal. You can add bell pepper, eggplant or zucchini to the general list of vegetables to taste. Peel the garlic. Turn on the oven to 180 degrees in advance.
STEP 2
Rinse and dry the meat. Cut off the film and wires.
STEP 3
Using a sharp knife, make cuts across the entire surface of the carcass. Insert a clove of garlic and rosemary into each cut. If the cloves are large, then they can be cut lengthwise into 2-3 parts.
STEP 4
Spread a mixture of ground peppers, salt and juniper berries over the meat. Grind the berries in a mortar first. Add a few rosemary petals. Drizzle the boar leg with a little olive oil. Rub the spices and oil over the entire surface of the game using massaging movements. Cover with a wide plate or wrap in cling film and place in the refrigerator to marinate for a while (about 1 hour).
STEP 5
Peel the onions, carrots and potatoes. Wash the vegetables, dry and cut into large pieces.
STEP 6
Add your favorite spices, salt and pepper to taste. Mix everything.
STEP 7

Place the meat in the middle and distribute the vegetables along the edges. Drizzle with olive oil. Place in the preheated oven and bake for about 30 minutes.
STEP 8
Pour white wine over the boar. Cover the pan with a lid or foil and simmer for 1.5-2 hours in the oven. Time and temperature depend on the characteristics of your oven and how young the animal was. STEP 9
Turn off the oven. Pour the resulting juice over the meat and vegetables and leave for another 15-20 minutes in the cooling oven. Ready! You can serve!
