Blues Marble Cake with Blue Tea

Step-by-step preparation
STEP 1

Mix the dry ingredients from the first group for the light dough: flour, starch, baking powder, almond flour.
STEP 2

Grind clitoria flowers (blue tea) with sugar into powder in a coffee grinder.
STEP 3

Beat softened butter with powdered sugar, add one egg at a time to the butter mixture.
STEP 4

Add flour mixture and cream alternately to the buttercream. Divide the dough into two parts. Place approximately 2/3 of the batter into the babka pan (or other cake pan).
STEP 5

Add crushed clitoria and cream to a smaller part of the dough; if desired, you can enhance the color with tincture of clitoria flowers.
STEP 6

Place the dark dough on top of the light dough and mix lightly.
STEP 7

Bake in a preheated oven for approx. 180 degrees before testing on a dry toothpick, approximately 45-60 minutes. Immediately remove the cake from the pan onto a wire rack and let cool before serving. If desired, you can cover it with glaze.
