    First of all, defrost the fish. Read about how to do this correctly in a separate article at the link at the end of the recipe. Rinse the defrosted fish, remove the head, tail and fins. Filet the fish, removing everything and bones from it.

    Peel the onion and cut it into quarters. Lightly squeeze the milk out of the white bread. Pass the fish fillet through a meat grinder with onion and white bread.

    In a bowl with the chopped fish, add an egg, salt and pepper to taste, and chopped fresh herbs. Mix everything until smooth. Some people add mayonnaise to the minced fish for juiciness, but the cutlets turn out very juicy even without mayonnaise.

    Using wet hands, form the minced fish into cutlets. You can fry the cutlets directly, or you can roll them in flour or breadcrumbs before frying. I rolled my cutlets in breadcrumbs.

Place the prepared cutlets in the pan. Fry the cutlets first on one side until golden brown, then turn them over and fry on the other side.

I like this fish, it has delicious meat, I usually just fry it in oil. This was my first time making fish cutlets from blue whiting. After defrosting and cutting, the fillet was too moist, even wet. I squeezed it out with my hands, after which the fillet spun through the meat grinders perfectly, I even cranked it twice just in case. After this, the minced meat became even thicker. Of course, there is a lot of waste left, but I cooked the bones for the cat) I squeezed the bread well. After all the additions, the result was thick minced meat, which formed perfectly into cutlets. I fried the cutlets just like that, without rolling them in anything. True, during the frying process a little juice was released, but the cutlets turned over well and did not stick to the pan. After frying, the cutlets were placed in a glass refractory dish and heated for 15 minutes in the oven. The cutlets turned out quite dense, but at the same time soft. Very tasty and rosy! There is a slight smell of fish; adding dill to the minced meat reduced this smell. Excellent recipe, from a kilogram of minced meat you get a whole mountain of cutlets)

Wonderful cutlet recipe! And you don’t need any expensive fish, blue whiting is fatty and tasty. It is quite easy to clean; the only bones in it are the spine. For juiciness, in addition to onions and bread, I added a little pork lard. The cutlets turned out juicy, tender... and very tasty!)

thanks for the recipe! I have never cooked fish cutlets. but there was one and a half kg of navaga in the freezer and I fried some good cutlets according to this recipe. the minced meat turned out to be loose, despite the fact that I squeezed the fillet. but thanks to the eggs - the cutlets held together perfectly! “Some people put the fillet with bones through a meat grinder, and then just remove the bones.” Seriously, does anyone do this?!
