STEP 1
How to make a salad from beet tops? Prepare all the products indicated in the recipe. Instead of pine nuts, you can use walnuts or any other nuts of your choice.
STEP 2
First of all, wash the tops. Rinse each leaf thoroughly to remove any remaining dirt and dust. Cut the leaves and stems into small pieces 4-5 cm long. Boil a small amount of water in a saucepan or saucepan. Place the tops in boiling water for 1-3 minutes. One minute will be enough for young thin leaves, but if the leaves are more mature and hard, then leave them in boiling water for 2-3 minutes. Drain the tops in a colander and cool.
STEP 3
At this time, peel the onion and garlic. Red onions or shallots are perfect for salad. Cut the onion into thin quarter rings or half rings, and chop the garlic finely with a sharp knife.

Place beet tops in a deep salad bowl.

Cut the cherry tomatoes in half or into quarters. The salad will look colorful and appetizing if you take tomatoes of different colors. Add onions and tomatoes to the beet tops.

Make a flavorful dressing. Pour olive or vegetable oil and vinegar into a deep small bowl. Instead of vinegar, you can use freshly squeezed lemon juice. Add chopped garlic, ground peppers and dry spices such as basil or oregano. For a more balanced taste, I add a pinch of sugar, you can omit the sugar. Mix everything thoroughly.
STEP 7
Add chopped pine nuts or walnuts to the salad bowl. If desired, the nuts can be lightly dried in a dry, hot frying pan. Salt everything to taste and pour over the aromatic dressing. Rinse the greens and dry. Parsley, dill or young green onions are perfect for the salad. Mix everything.
