    Gradually pour warm light beer into the bowl with flour - it should be freshly opened, with gases. If the beer runs out of steam, the batter will not turn out the way it should. All this time, while we are pouring the beer, we need to make continuous stirring movements. This can be done with a spoon. A homogeneous mass without lumps should form.     After this, add butter to the resulting mass. It should not be frozen, otherwise it will not melt so quickly and will not interfere with the total mass. It is better if the butter is well melted.

I wanted to fry pike perch fillet in beer batter. I didn’t make any kind of batter, but I didn’t use beer. I sifted the flour for the dough to saturate it with oxygen. I added a little butter of my own. Heated it in the microwave for 10 seconds. And my beer is light Czech. Having mixed all the products with a whisk, I got a thick batter with a smooth consistency. The fish was first rolled in flour and then dipped in batter. It holds up well and doesn't sag! There was enough for four small fillets. After frying, the batter turned out very fluffy, tasty and crispy! The fish in it is like filling in a pie). I will use this recipe again!
