Beef ribs with potatoes
Step-by-step preparation
STEP 1
How to make beef ribs with potatoes? Prepare all the necessary ingredients. Choose young meat; old meat can be identified by the darker color of the flesh. For such meat it will be necessary to increase the cooking time.
STEP 2
Rinse the beef ribs well under running water, and be sure to dry them with a paper towel. Excess moisture will prevent the meat from browning. Cut the ribs into portions; you can leave some pieces with the bone itself, and some without it.
STEP 3
Take the carrots, wash them with a brush under running water, peel them and dry them. Peel the onion. Coarsely chop the peeled and washed onions and carrots. I cut the carrots into thick slices and the onion into half rings. You can choose the cutting method to your liking.
STEP 4
Take a frying pan with high sides, a thick-bottomed pan or cauldron. I have a cauldron. Place on fire, heat, add oil. In heated oil, fry the ribs on both sides until golden brown, turning them over with a wooden spatula.
STEP 5
Add onions and carrots to the meat and continue light frying over low heat for about 5-7 minutes. No need to fry until charcoal. Turn ingredients over with a spatula.
STEP 6
Pour boiling water from the kettle over the ribs with vegetables so that it covers the fried foods. Simmer at a low simmer, covered, for 40-45 minutes until the meat is soft.
STEP 7
While the meat is stewing, wash the potatoes, peel them and cut into large cubes.
STEP 8
Add potatoes to the cauldron. If you want to get stewed potatoes with ribs with a thick consistency, then add less water; if it’s more liquid, then add more water. This is a matter of taste and habit. Simmer the beef ribs with potatoes until the potatoes are ready, add salt, add spices and bay leaf 10 minutes before the end of cooking. You can check the readiness of the potatoes by piercing them with a knife; if they are soft, then they are ready.
STEP 9
Chop the dill and parsley, as well as the green onions. Prepare the softer parts and leaves for serving, and add the stems and bleached part of the onion along with the bay leaf.
STEP 10
Serve the beef ribs with potatoes hot, sprinkled with fresh herbs.
