Beef goulash like in the USSR like in a Soviet canteen
Ingredients
Step-by-step preparation
STEP 1
How to make beef goulash like in the USSR, like in a Soviet canteen? First, prepare the necessary ingredients according to the list. If you use frozen meat, you must first defrost it properly on the bottom shelf of the refrigerator. You can replace tomato paste with ketchup. You can use any vegetable oil, I used sunflower oil.
STEP 2
Wash the meat, be sure to dry it with a paper towel, otherwise excess moisture will not allow it to fry - it will stew. Cut into small pieces.
STEP 3
Peel the onion and cut into small cubes.
STEP 4
Heat vegetable oil in a heavy-bottomed frying pan over medium heat. Add the beef and fry, stirring, until golden brown.
STEP 5
Add the onion and fry everything together until the onion is translucent, about 3 minutes.
STEP 6
Add tomato paste and salt to the pan. Mix everything.
STEP 7
Pour about half of the hot meat broth or water into the pan until the liquid lightly covers the meat. If you want more gravy, increase the amount of broth as required.
STEP 8
Bring to a boil, reduce heat to low and simmer, covered, for about 1 hour or longer until the beef is tender. The exact braising time depends on the selected part of the carcass and the age of the animal. If necessary, add a little more broth to the pan.
STEP 9
Separately, in a dry frying pan, stirring constantly, fry the flour until golden brown and a bright nutty aroma appears.
STEP 10
Pour the remaining broth or water into the flour and quickly stir until smooth. If you still cannot get rid of the lumps, rub the sauce through a sieve.
STEP 11
Pour the flour mixture into the pan with the meat and stir. Next add bay leaves and peppercorns. Simmer the Soviet goulash under the lid for another 10-15 minutes.
STEP 12
Divide the finished Soviet-style beef goulash with gravy into plates and serve with any side dish. Bon appetit!
