Barmak

    How to make a barmak? Prepare all products. Take non-liquid sour cream, premium wheat flour. Melt the butter in a water bath or in the microwave and cool it. Add sour cream and salt to a bowl with butter. Stir. Add sifted flour.

    Knead elastic dough. Please note that you may need more or less flour than I did. Be guided by the consistency of the dough. The dough should not stick to your hands, but should not be tough.

    Prepare the cookie filling. Grind the walnuts in a blender or coffee grinder and place in a bowl. You can simply chop the nuts with a knife, but as finely as possible. Add sugar and softened (but not melted) and cut into pieces butter to the nuts. Grind the filling into crumbs. To simplify the process, you can melt the butter and mix with sugar - then the sugar will melt a little.

    Form the dough into a sausage. Cut it into small pieces, about 20 grams each. Roll each piece into a ball, and then roll it into flat cakes, like dumplings.

    Place a little filling in the middle of each tortilla. Then form a mini roll.

    You can cut off the uneven edges of the roll or leave it as is. Or immediately roll out the dough not into flat cakes, but into squares, then the rolls will turn out with a straight edge.

    Preheat the oven to 180 degrees. Grease a baking tray with oil. Place cookies on it. Bake it in the oven for about 30 minutes. Determine the exact baking time and temperature based on your oven. Remove the cookies when they are slightly browned. You can’t overcook the barmak in the oven, otherwise when it cools down it will be hard.

    Remove the cookies from the baking sheet, place on a plate, and sprinkle with powdered sugar. If you wish, you can sprinkle with cinnamon. Serve barmak with tea, coffee or milk. It is better to store such a delicacy in a sealed container, covered with foil so that it does not become hard. Enjoy your tea!

Snezhana, thanks for the recipe! It turned out very tasty! The only thing that was a little disappointing was that the filling leaked out. I rolled the cookies tightly and placed them seam side down to prevent them from unrolling while baking. Maybe this is my mistake and I should have just folded the cookies overlapping like yours?
