Remove the butter from the refrigerator in advance so that it softens well. Be sure to add a pinch of salt - it will emphasize and reveal the taste of the baked goods. A small pinch of vanillin is enough - it is a very strong flavoring. Turn on the oven to 180 degrees in advance.

    Place soft butter and sugar in a bowl. Beat the butter and sugar with a mixer until fluffy and light.

    Add eggs one at a time.

    After each egg, stir the mixture until smooth using a silicone spatula. You should get a smooth and fairly liquid mass.

    Peel the bananas and grate them. I advise you to do this just before adding to the dough, as the bananas begin to darken. You can mash them with a fork, but using a grater will result in a more homogeneous mass. I do not recommend chopping bananas with an immersion blender - they will become an unattractive gray mass, which will make the baked goods not very beautiful. Plus, large pieces of bananas look more beautiful when cut.

    Sift flour into butter mixture. Sift the baking powder in there. Add a pinch of salt and vanilla.

    Take a muffin tin. I have a silicone mold, there is no need to grease it. I also took paper liners for cupcakes - this will make it easier to take out the baked goods. Using a spoon, spoon the dough into the molds, filling them about 2/3 full. The muffins will increase in size as they bake.

    From this quantity of products I got 12 muffins measuring 7*4 cm. For strength, I placed the molds with muffins on a baking sheet.

    Bake the muffins in the oven, preheated to 180°C, top-bottom mode, about 25 minutes. The exact time and temperature will vary depending on your oven. Excellent and simple recipe, thanks to the Author! I used very overripe bananas for the dough. It makes a great dessert for tea! The muffins are moderately moist and very tasty! I have baked them twice already and will bake them again.

I had two overripe bananas left, I had to save them). I found a suitable recipe for banana muffins on the site. I did not change the amount of ingredients. I grated the bananas on a coarse grater. This is really better than turning them into puree. I sifted the flour twice along with the baking powder. The dough turned out quite thick, lumps fell from the spoon. I also got 12 muffins. I really like paper liners, they make the baked goods look neat and you don’t have to wash the pan. My muffins were baked for 30 minutes at 180°C. They were nicely browned and rose up! The dough is juicy but not too wet. It is porous, soft and not dark! The muffins smell so much like bananas! Delicious! Thanks for the recipe!

I made a pie using this recipe because... There are no muffin tins) it turned out great! I just added 50 grams of sugar and 280 grams of flour. The result was a sweet, soft, fluffy pie! Thank you very much for the recipe!
