    How to make banana cheesecake? Prepare your food. Any fresh shortbread will do, for example, “Jubilee”, “Baked Milk”. You can also bake it yourself. It is better to take cottage cheese and sour cream with high fat content (I have cottage cheese 9%, sour cream 20% fat). Take high quality dairy products, without vegetable substitutes. Bananas are ripe, but not overripe.

    Grind the selected shortbread cookies into crumbs using any convenient method (blender, rolling pin, hands, food processor). Melt the butter and cool. Read about how to do this at the end of the recipe. In a deep bowl, combine the crushed cookies and melted butter, stir, turning everything into a homogeneous mass.

    Take a springform pan for dessert; it will be the most convenient for preparing cheesecake. I use a mold with a diameter of 18 centimeters. Place the butter crumbs in the mold and tamp them down well either with your hands or with the flat bottom of a glass. You can make a rimmed cheesecake by spreading some of the crumbs around the edges of the pan. Place the pan with the base in the refrigerator.

    Prepare the gelling mixture according to the instructions on the package. I use instant gelatin, pour boiling water over it, mix thoroughly until completely dissolved, and then cool to room temperature. Read about other ways to work with gelatin at the end of the recipe.

    In a deep bowl or blender bowl, mix fresh cottage cheese, sour cream, sugar, chopped bananas without skin. Puree everything into a homogeneous mass using a blender. If you don’t have one, then rub the cottage cheese through a sieve and then mix the products with a spoon. In this case, mash the bananas with a fork.

    Pour gelatin into the curd and sour cream mixture, mix thoroughly and pour everything into a mold with a sand base. Place the cheesecake in the refrigerator until the filling has completely hardened, for at least 3-4 hours. To ensure that the cheesecake comes out of the mold well, you can first grease it with oil, cover it with foil or cling film (then the edges will not be very smooth, like mine).

    Carefully remove the finished cheesecake from the mold, remove the film and place on a plate. You can decorate it to your liking: sliced ​​banana pieces, chopped nuts, pour over melted chocolate or caramel. Bon appetit!

Wonderful banana cheesecake recipe!!! THANK YOU!!! Instead of millet sugar, I added cane sugar, vanilla powder, coconut flakes and replaced gelatin with agaragar. I poured portions into muffin tins, very tasty, thanks for the recipe
